Кумыс – это кисломолочный напиток, сделанный из кобыльего молока, реже из верблюжьего молока. Это очень полезный и вкусный пенящийся напиток, хотя и со спиртовым привкусом.

Кумыс древний напиток, первое упоминание о нём можно встретить у древнегреческого историка и путешественника Геродота.

Кумыс рекомендуют пить при истощении и авитаминозе, этот уникальный напиток нормализует обмен веществ, эффективно снимает похмельный синдром, полезен при язве желудка и двенадцатиперстной кишки, при дизентерии и брюшном тифе, повышается содержание гемоглобина и нормализует лейкоцитарную формулу крови, обладает бактерицидными свойствами, им лечат туберкулез, сердечно-сосудистые заболевания, и даже приостанавливается развитие рака!

Как делают кумыс? Кобылье молоко заквашивается, используя специальную кумысную закваску из дрожжей и смеси болгарской и ацидофильной молочнокислой палочки. Причём, учтите, собрать кобылье молоко значительно сложнее, чем коровье. После смешивания с закваской, кумыс вымешивать в течение часа при температуре 18-20°С, затем разливают в чистые (!) стеклянные посуды. Теперь нужно выждать некоторое время, чтобы белок распался до легкоперевариваемых веществ, а именно пептона, альбумина и полипептида, а молочный сахар преобразовался в молочную кислоту, этиловый спирт, углекислоту и ещё в целый ряд ароматических веществ.

Сколько градусов в кумысе? Это зависит от срока выдержки, 6 часовой кумыс имеет крепостью всего 1°, суточный (2 суток) - 2°, 3-4 дня - 4-5°.

Как пьют кумыс? Лучше пить тут же перед едой или через 1,5 часа после еды. На ночь лучше не пить, ибо он мочегонный.

Koumiss or kymyz is a sour milk drink made from mare's, less often cow's and camel's milk. Ready koumiss is a fizzy, foamy drink with an alcoholic taste and smell.

History. Koumiss has been known to nomadic peoples since ancient times. It was prepared by nomads from the southeast of Russia and Central Asia, as well as from the southern Black Sea steppe regions. The first mention of koumiss can be found in the ancient Greek historian and traveler Herodotus, who lived in the V century BC. He wrote that the favourite beverage of the nomadic Scythians was mare's milk prepared in a special way. The nomads carefully concealed the secret of making koumiss. Those who divulged the secret were blinded.

Marco Polo (1254-1324) called koumiss the favourite beverage of the Tatars and compared it to white wine.

Koumiss was first mentioned in Slavic sources in the 12th century (in the 1182 Ipatyevskaya chronicle, which records that Prince Igor Seversky was able to escape from Cumans captivity after the guards became drunk on the "milky wine", which was the name given to koumiss in those ancient times).

From ancient times and up to now, koumiss has been one of the favorite drinks of many peoples, including the closest neighbors of our ancestors. It is known that the Tatars and Mongols drank koumiss long before the invasion of Russia. Since ancient times it has also been known to such nomadic peoples as the Kazakhs, Kyrgyz and Bashkirs. Koumiss is the national drink for these people.

With time nomads began to make koumiss from the milk of camels and cows. The Kalmyks were the first to use this new raw material. The Bashkirs still drink koumiss exclusively from the milk of mares, while the Kazakhs and Turkmens drink it from the milk of camels.

In special koumiss clinics and sanatoriums koumiss is made on sourdough, prepared on pure cultures of lactic acid bacilli and yeast under a strict regime of fermentation. Protein of mare's milk forms tiny delicate flakes, almost imperceptible on the tongue, and fermented mare's milk differs from fresh milk in its consistency.

In folk medicine, koumiss is used to treat exhaustion and avitaminosis. Koumiss energizes the body, has a beneficial effect on the nervous system and normalizes metabolism. In ancient times, koumiss was called "the drink of heroes. This drink is beneficial both for healthy people and those recovering from debilitating illnesses.

Koumiss perfectly quenches hunger and thirst, and it is also able to relieve hangover quite quickly.

Koumiss is good for the stomach, it normalizes the secretory activity of the digestive organs, has a beneficial effect on stomach ulcers and duodenal ulcers and is beneficial for dysentery and typhoid fever. Koumissotherapy has a beneficial effect on the blood: the content of hemoglobin is increased and the leukocyte count is improved. It has bactericidal properties and the ability to secrete antibiotic substances which prevent and treat tuberculosis and cardiovascular diseases. To some extent koumiss can slow down the development of cancer.

Contraindications for koumiss cure are diseases of gastrointestinal tract at acute stage and individual intolerance to koumiss. There are no age contraindications for koumiss: it is equally beneficial for children, adults and elderly people.

There is also a curious fact.

Islam, as we know, forbids Muslims to drink alcoholic beverages. Koumiss is not banned by the Koran, so it is the only intoxicating drink for a Muslim.

How is koumiss made? Mare's milk is fermented with a special koumiss yeast and a mixture of Bulgarian and acidophilus lactic straw. It must be said that mare's milk is much harder to collect than cow's or goat's milk. A mare is milked 4-6 times a day, and it has to be done very quickly, the milkmaid has no more than half a minute to collect the milk. One mare gives about 5 liters of milk a day.
